Abstract

Çalışma kapsamında 30 tulum peyniri örneğinden 75 adet LAB izole edilmiş ve API 50 CHL ile tür düzeyinde tanımlanarak; % 39,7’si Lb. brevis 1, % 27,4’ü Lb. brevis 3, % 20,6’sı Lb. plantarum 1, % 5,5’i Lb. paracasei spp. paracasei 1, % 4,1’i Lb. pentosus, % 1,4’ü Lb. brevis 2, % 1,4’ü Lactococcus lactis spp. lactis 1 olarak belirlenmiştir. 2 adet izolat ise tanımlanamamıştır. Süt ürünlerinde ilk kez bu çalışmada Lb. pentosus türüne rastlanılabileceği ortaya konmuştur. Tüm izolatların antimikrobiyal etkisi incelendiğinde anti-listerial etkinin bütün süpernatantlar için organik asitlerden ileri geldiği belirlenmiştir. Sadece Lb. paracasei spp paracasei türüne ait 2 izolatlarının (11.1; 21.3) ürettiği H2O2’in de anti-listerial etki gösterdiği belirlenmiştir.
In this study 75 LAB cultures isolated from 30 tulum cheese samples and identificated with API 50 CHL. Results of this idenfication is; 39,7% Lb. brevis 1, 27,4% Lb. brevis 3, 20,6% Lb. plantarum 1, 5,5% Lb. paracasei ssp. paracasei 1, 4,1% Lb. pentosus, 1,4% Lb. brevis 2 and 1,4% Lactococcus lactis ssp. lactis 1. Two of the isolates were not identified. This study is the first to prove that Lb. pentosus can be seen in dairy products. Considering the antimicrobial activity of all the supernatants, organic acids were found to be the source of the anti-listerial impact. Only two isolates of Lb. paracasei ssp. paracasei (11.1 and 21.3) were found to be anti- listerial with the H2O2 they produce. This study has also showed that bacteriocins produced by 7 LAB isolates have no anti-listerial activity or this activity can not be determined with this method. In addition, this is also the first study to examine the anti-listerial activity of Lb. brevis and Lb. pentosus. According to the results of the study, both of the species were found to have anti-listerial activity which results from the organic acids produced.
