dc.description.abstractBu çalışmada, narda bulunan fenolik bileşenlerin ve antosiyaninlerin biyoyararlılığına gıda matrisi ve gıda bileşenlerlerinin etkisi incelenmiştir. Biyoyararlılıkları belirlemek amacıyla in vitro sindirim metodu uygulanmıştır. Narda bulunan fenolik maddelerin ve antosiyaninlerin potansiyel biyoyararlılığı üzerine günlük tüketilen gıdaların etkisini araştırmak amacıyla gıda bileşenleri ve gıda matrislerinden oluşan bir model sistem geliştirilmiştir. Gıda matrisinde; bitkisel yağ, yağsız süt, yağsız pişmiş et, ekmek, yağsız yoğurt, probiyotik yoğurt, elma, limon suyu, bal, soya sütü, krema ve soya fasulyesi nar taneleri ile model sistem olarak kullanılmıştır. Gıda bileşenleri olarak da buğday proteini, süt proteini, et proteini, laktoz, fruktoz, galaktoz, glukoz, tuz, C vitamini, nişasta, pişmiş nişasta, E vitamini, linoleik asit, selüloz, sitrik asit ve pektin kullanılmıştır. Nar ile gıda maddeleri ve bileşenlerine in vitro sindirim metodu uygulayarak toplam fenolik madde analizi, toplam antosiyanin madde analizi yapılmış, fenolik madde profili ve toplam antosiyanin madde analizi yapılmış, fenolik madde profili ve antosiyanin madde profili HPLC-PDA ile belirlenmiştir. Sonuçlar tek başına nar meyvesine in vitro sindirim metodu uygulanmasıyla kıyaslanmış ve birlikte tüketim sonrası fark olup olmadığı istatiksel olarak değerlendirilmiştir. Antosiyaninlerin fenolik bileşiklerle kıyaslandığında daha düşük biyoyararlılıklarının olduğu bulunmuştur. Antosiyanince zengin nar içeren bir ürün geliştirirken ve tüketirken protein içeriğinin ve C vitamininin yüksek olmamasına dikkat edilmeli, biyoyararlılık üzerine şeker ve yağ içerikliklerinin olumsuz bir etkisinin olmadığı sonucuna varılmıştır.

As food components, wheat protein, milk protein, meat protein, lactose, fructose, galactose, glucose, salt, vitamin C, starch, cooked starch, vitamin E, linoleic acid, cellulose, citric acid and pectin were used. Total phenolic content, total anthocyanin content, phenolic profile and anthocyanin profiles by HPLC-PAD were analyzed to evaluate the bioavailability in pomegranate, pomegranate plus foods and pomegranate plus their components after the application of in vitro digestion method. The results were compared with the application of vitro digestion method to the pomegranate and they were statistically evalıated whether there were any difference after co-consumption. Anthocyanins are found to have lower bioavailability during digestion when compared to phenolic compounds. In conclusion, protein and vitamin C content should not be high while consuming or developing a product with pomegranate, which is rich in anthocyanins. Furthermore, one should be aware that sugar and fat content have no negative effect on anthocyanin bioavailability.
