Pdca Performans İyileştirme Metodunun Süt Ürünleri Üretiminde Uygulanması

Abstract

Bu çalışmada verimlilik ve performans kavramları üzerinde durulmuştur. Bu kavramların gerek ulusal ve gerekse kurumsal olarak ölçülmesinin gelişmedeki önemi dile getirilmiştir. Performans iyileştirilmek isteniyorsa, öncelikle ölçülmelidir cümlesi göz önüne alınarak PDCA tekniği ile performans iyileştirme anlatılmıştır. Planlama, uygulama, kontrol etme ve önleyici faaliyet aşamalarından oluşan sistem süt ürünleri üreten bir fabrikada uygulanmıştır. Standartlar hazırlanmış ve ana kriterler olan % performans ve % etkenlik tanımlanmıştır. Eğitimler verilmiş ve ölçümler yapılmıştır. Kontrol etme aşaması için üretim sahasındaki duruşların raporlandığı yazılım oluşturulmuştur. Ölçümler yapılıp kriterlerin değerleri hesaplanmıştır. Çıkan sonuçlara göre önleyici faaliyetler uygulanmış ve genel olarak hatlarda %15 ile % 20 arasında iyileşmeler gözlenmiştir.

In this study, productivity and performance concepts are explained. Also, importance of improving these concepts by measuring them on national and institutional field. If performance is to be improved, it must first be measured . By taking that sentence into account, PDCA performans improving method is explained. PDCA method, which consist from four steps plan, do, check and act , is used in a dairy company. In the implementation phase standarts prepared and basic kriterias which is % performance and %efficiency is defined. After being educate the operators about the system, measurements are being started. For the control phase, a tool about downtime control is being developed. Measurements is being done and kriterias being calculated. In accordance with the calculations, necessary actions done and generally an improvement between %15 and %20 seen.
