Özet
Bu çalışmada Ege Bölgesi’nde 2003 ve 2004 yılında farklı yörelerden kurutma aşamasında temin edilen kuru incir örneklerinde mikoflora, mikotoksijenik küfler, incirde okratoksin A ve fumonisin B1 varlığını belirlenmiştir. Kuru incir örneklerinde A. section Nigri üyelerinden A. aculeatus, A. awamori , A. carbonarius, A. foetidus ve A. niger agg.; Fusarium üyelerinden F. verticilloides, F. sporotrichioides; A. section Flavi üyelerinden A. flavus, A. parasiticus ve A. tamarii; Penicillium üyelerinden P. chrysogenum, P. citrinum, P. commune, P. solitum, P. funiculosum, P. purpurogenum ve diğer Aspergillus üyelerinden ise A. ustus ve A. terreus izole edilmiştir. Kuru incir örneklerinde OTA ve FB1 varlığı HPLC yöntemi ile araştırılmıştır. Kuru incir örneklerinin %48’inde OTA, %75’inde FB1 varlığı belirlenmiştir. Ortalama okratoksin A konsantrasyonu 2003 yılında 0,48 μg/kg ve 2004 yılında 0,59 μg/kg’dır.. Ortalama FB1 konsantrasyonu 2003 yılında 0,368 μg/gr ve 2004 yılında 0,223 μg/gr’dır. Çalışmada örneklerin temin edildiği bölgeler arasında OTA ve FB1 varlığı açısından istatiksel bir fark (p>0,05) mevcut değildir. OTA içeren örneklerin %89,1’inde OTA üreticisi siyah Aspergillus üyeleri ve FB1 içeren örneklerin %72,7’sinde fumonisin üreticisi F. verticilloides’in mikotoksinle birlikte bulunması kuru incirde OTA varlığından siyah Aspergillus üyelerinin, FB1 varlığından da F. verticilloides’in sorumlu olduğunu göstermektedir.
In this study, the mycoflora, potential mycotoxigenic moulds, OTA and FB1 incidence and levels in Turkish dried figs, collected from the drying stage in 7 different districts located in the Aegean Region in 2003 and 2004 was determined. A. aculeatus, A. awamori, A. carbonarius, A. foetidus and A. niger agg from A. section Nigri; F. verticilloides, F. sporotrichioides from Fusarium spp.; A. flavus, A. parasiticus and A. tamarii from A. section Flavi; P. chrysogenum, P. citrinum, P. commune, P. solitum, P. funiculosum, P. purpurogenum from Penicillium spp., A. ustus and A. terreus were isolated from dried fig samples. The occurrence of ochratoxin A and FB1 was investigated by HPLC. 48% of 115 dried fig samples contained OTA and 75% of samples had FB1. The calculated mean concentrations for OTA in 2003 and 2004 were 0,48 μg/kg and 0,59 μg/kg, respectively. The calculated mean concentrations for FB1 in 2003 and 2004 were 0.368 μg/gr and 0.223μg/gr, respectively. There is no significant difference between sampling areas (p>0.05) according to the percentage of OTA and FB1 positive samples. 89.1% of OTA positive samples infected with ochratoxigenic siyah Aspergillus spp. and 72.7% of FB1 positive samples had fumonisin producer F. verticilloides. These results suggest that black Aspergillus spp. and Fusarium spp. are responsible for OTA and fumonisin contamination in dried figs, respectively.
