Abstract
Bu çalışmada, organik ekmeğin kalite özellikleri tüm boyutları ile incelenerek kısıtlı olan bilimsel literatüre katkı sağlanması ve ticari olarak üretilen organik ekmeğin kalite özelliklerinin iyileştirilmesine ışık tutulması hedeflenmiştir. Bu bağlamda 2007 ve 2008 yıllarında Türkiye’de yetiştirilmiş buğdayların un, hamur ve ekmeklik kalite özellikleri, endosperm dokusu (sert/yarısert), kepek rengi (kırmızı/beyaz), öğütme teknikleri (valsli/taş değirmen), tarım sistemi (organik/konvansiyonel) gözönüne alınarak değerlendirilmiştir. Un kalitesi açısından nem, kül, yaş ve kuru gluten, “Kjeltec”, “SE-HPLC” ve “SDS-PAGE” ile protein, sedimentasyon, düşme sayısı, renk, “RVA”, “DSC”, amilograf, element, zedelenmiş nişasta, diyet lifi, pestisit analizleri; hamur kalitesi bakımından farinograf, ekstensograf, maturograf, miksolab analizleri; ekmek kalitesi için ise hacim, renk, sertlik, elastikiyet gibi dokusal özelliklere ait incelemeler ve duyusal analizler, fermentasyon ve raf ömrü araştırmaları gerçekleştirilmiştir. Her bir kalite özelliği ayrıntılı olarak değerlendirilmiş ve özellikle öğütme tekniği başta olmak üzere, buğday çeşidi ve tarım sisteminin ekmeklik buğday kalitesini istatistiksel olarak önemli düzeyde etkilediği (p<0,05) tespit edilmiştir. Organik ekmek üretiminde uygun hammadde ve proses seçimiyle ürün kalitesi yüksek ekmeklerin elde edilebileceği belirlenmiştir.
This study involves physical and chemical characterization of different wheat classes based on endosperm texture (hard vs. semihard) and bran color (red vs. white) as well as the milling techniques used (roller mills vs. stone mills), farming system (organic / conventional) and the growth year. In this project flour, dough and bread properties of some organic Turkish wheat varieties were investigated. Moisture, ash, wet and dry gluten, protein (Kjeltec, SE-HPLC and SDS-PAGE), sedimentation, falling number, colour, RVA, DSC, amylograph, element, damaged starch, dietary fiber, pesticide analysis in flour; farinograph, extensograph, maturograph, mixolab analysis in dough; volume, colour, texture and sensory analysis, fermentation and shelf life study in bread were made. It was found that especially the milling technique, wheat classes and farming system affected the flour, dough and bread quality significantly (p<0.05). The scientific research about organic bread is still mostly limited, therefore investigation of the organic bread quality is very important to enhance the available literature and to produce healthy and qualified products.
